I don't use Ubiquiti gateways or eero but am familiar with their switches, APs and CKs. That said disable smart queues in the udm and consider disabling its IDS features or you'll be limited to 3.5g. And yes, you'll want to bridge the eero so it acts as a AP while passing off dhcp, etc. to the udm: https://support.eero.com/hc/en-us/artic ... o-or-eeros
If you haven't purchased the eeros yet you might consider using UniFi APs instead since the udm can manage them via its integrated network controller. They also support vlan tagging whereas the eeros do not I believe... May not matter if you're just going to setup a flat network but vlans can be very useful to help isolate iot devices, cut down on broadcast traffic, etc.
